Three siblings, a front yard and the vision to make a change.

We started as a kebab place "stealing" our mother's front yard, without knowing that this would lead us to creating Contemporary Cyprus Cuisine. 

But how do you go about exploring an almost unknown, without a clear identity cuisine?

For us living in a village nature was the answer. The fields.

We started foraging, collecting traditional recipes, speaking with the elders, visiting different parts of Cyprus to try their traditional recipes and learn about their techniques. And of cource, a lot of experimentation.

"What is Cyprus Cuisine?" was always the question, and the answer came to us throughout the years, one dish at a time.

Cyprus Cuisine is a fusion cuisine that combines elements from all the different cultures of all the people who came to live here.
When you taste the local cuisine, you get a taste of Levantine, Greek, Armenian, Turkish, Italian and French cuisine, and all of them combined together compose the taste of Cyprus. 

It's wild, but honest; simple, yet complex.

And that was and still is until today the base on which we built and continue to develop our philosophy and our cooking approach.

Today we specialize on Seasonal Menus and different projects across the island and abroad. Our focus is on finding the best that the island has to offer and present them using our knowledge of modern cooking techniques gained throughout the years.
We work with local farmers and microproducers to build dishes that one day might redefine local cuisine.
